I've made my own mincemeat for the last seven years or so and we love mince pies in our house so much that we normally get through a good seven dozen from the middle of December! We try different ones, Jamie Oliver's made with filo pastry, Mary Berry's orange pastry (my fav pastry for these) stars and holly leaves on top instead of full tops, too much pastry for me. I'm trying not to peak too soon. :-) It's wonderful that you are making your own cards. I really should give it a try next year but I don't usually send many anyway. I have to admit to buying my mincemeat too. I'm not a huge fan of mince pies but last year Selma (eclectic home and life) posted a recipe which is delicious. It was like two layers of shortbread with the mincemeat in between then topped with flaked almonds and dried cranberries.
